Homemade Pasta From Bruno’s

Fresh Pasta Handmade Daily In-house

With Portland’s rapidly growing restaurant scene, Bruno’s sets itself apart from the rest with our genuine Italian pasta, all made fresh in-house.

You can’t hear the words, “authentic Italian” without immediately thinking of pasta. A centerpiece of almost all Italian dishes, pasta has been enjoyed for centuries. Here at Bruno’s, we have been making our own homemade pasta in-house daily since 1999.

How It All Started

When Bruno’s relocated to our current location at 33 Allen Avenue in Portland, owner Bob Napolitano set his efforts on creating homemade Italian pasta to serve with Bruno’s meals. After talking with another employee, Napolitano was influenced to purchase his first pasta sheeter.

This pasta sheeter allowed for our chefs to create thin sheets of pasta that could be used for things like ravioli and spaghetti. With the new pasta sheeter, Bruno’s began offering different types of homemade ravioli with fillings such as spinach, cheese, and asparagus.

Eventually, Napolitano purchased a pasta extruder, which allowed Bruno’s to create many different types of homemade pasta. Today, we make our own homemade ravioli, spaghetti, fettuccine, capellini, linguini, as well as a wide variety of other pastas.

How It’s Made

So how do we create our homemade pasta? First, the dough is made by mixing together flour, water, and eggs. Other ingredients may be added to achieve different tastes. Depending on the type of flour, the dough can either be fed through the pasta sheeter or through the pasta extruder.

If the dough is made with soft flour, it can be fed through the sheeter. If not, the dough must be used in the extruder. The extruder uses interchangeable dies which form the shape and texture of the pasta. The type of pasta that is made is based upon the die that is used. Once the pasta is made, it is ready to be cooked.
