Bruno’s Restaurant & Tavern Launches Bruno’s Pasta Company

August 31, 2017

Bruno’s Restaurant & Tavern, a Portland, Maine favorite for casual, homestyle Italian-American cooking since 1981, is announcing the launch of a product line consisting of ravioli, sauces and dressings.

Bruno’s Pasta Company will use authentic, imported Italian equipment to make a unique, Maine-made product that will be offered initially by local grocers. The new retail and wholesale offerings will allow others to bring a taste of the restaurant into their own kitchen.

The announcement comes after months of planning and development by the Bruno’s team. “Our love for making our own pasta has slowly grown over the years. It wasn’t until we bought an antique extruder from a friend did we become intrigued by the possibilities of small batch, commercial pasta; especially ravioli. We have since been trained in the latest methods and we continue to perfect our craft,” said Danny Napolitano, general manager of Bruno’s Restaurant and Tavern.

Throughout the planning and development stages for the Bruno’s Pasta Company, Bruno’s made a significant investment in a new commercial kitchen on Read street in Portland. The new kitchen includes state-of-the-art ravioli-making equipment imported from Italy, and everything needed to operate independently of the restaurant.

The Bruno’s Pasta Company line will initially offer ravioli that can be purchased at Bruno’s Restaurant and Tavern, located at 33 Allen Avenue in Portland, as well as at Micucci’s Grocery in Portland and Bow Street Market in Freeport. Several other retailers have also already expressed interest in carrying the product. In addition to these retail locations, Bruno’s Pasta Company products are available for wholesale to local restaurants and catering companies. Flavors include Traditional Cheese, Spinach, Sun Dried Tomato and Basil and soon, Lobster.

Bruno’s Pasta Company plans to expand beyond making ravioli to also offer the restaurant’s popular tomato sauce and poppy seed dressing for retail.

“For decades, my family has enjoyed serving the people of Greater Portland. Now, we look forward to sharing our casual, homestyle Italian-American cooking with a larger demographic,” added Napolitano.
