Pesto Ravioli with Spinach & Tomatoes
To make this recipe as quick and simple as possible, keep a jar of prepared pesto in your cupboard. In the midst of summer when you have fresh basil in your garden or available at the farmer’s market, take it up a notch by making your own pesto!
You could also cook the ravioli in advance, keeping it chilled in the fridge until you’re ready to saute the oil, tomatoes, and spinach.

Creamy Lemon Ravioli
As cream sauces go, this recipe has one that’s on the lighter side. The lemon gives it a brighter flavor and green peas add a delicious pop of spring to this ravioli dish.
You can also adjust it to taste, leaving out the peas or the spinach depending on the preferences of those eating it.
Don’t have a shallot on hand but have an onion? Swap it out – just remember onions usually have a little more kick than shallots.
